Description
Methi is a small-quantity spice. A few seeds added to the tempering give a curry the slightly bitter, maple-savoury backnote that is hard to identify but obvious when missing.
It is easy to overdo. A half teaspoon in a family curry will make it noticeably bitter, and there is no way back.
Standard in fish curry, in pickles, and in the tempering for dhal.
