Description
Ajwain is potent. A quarter teaspoon flavours a batch of dough, which is its most common use: rubbed into paratha, puri and savoury biscuit dough.
It also goes into fish batters and pakora batter, where the thyme note cuts the oil.
Rub the seeds between your palms before adding them. Whole and unbroken they release very little.
